Cut the onion into small cubes. Heat some oil in a frying pan, put the onion and fry for 2-3 minutes. Grate the beets on a fine grater.

6. Jamie Oliver Chocolate Beetroot Cake


  • 300 g dark chocolate (70% cocoa);
  • 250 g of beets;
  • 4 eggs;
  • 150 g of sugar;
  • 120 g chopped almonds;
  • 1 teaspoon baking powder;
  • 1 tablespoon cocoa powder;
  • a little olive oil;
  • a little flour.


Break 200 g of chocolate into small pieces and melt, stirring, in a steam bath. Grate the beets on a medium grater. Add egg yolks, sugar, almonds, baking powder, cocoa, melted chocolate to it and mix well.

Beat the egg whites with a mixer until white and creamy. In parts, carefully fold the proteins into the beet mass.

Grease a baking dish with oil. A 20 cm diameter mold works best. Line the bottom with parchment and dust the sides with flour.

Pour the dough into the mold and smooth out. Place in a preheated oven at 180°C for approximately 50 minutes. To test doneness, poke the center of the cake with a toothpick. It should come out dry. Melt the remaining chocolate and decorate the cooled cake with it.

  • 3 apples;
  • 650 g red cabbage;
  • 1 beet;

1. Beetroot pancakes

What you need: 500 g of boiled beets, 1 egg, 1 clove of garlic, 23 cups of white flour, salt and pepper to taste and vegetable oil for frying.

How to cook
Grate the beets, mix with the egg, spices, flour, squeeze out the garlic and knead the batter.

You need to fry potato pancakes in vegetable oil, warming up the pan well. Approximately 2 minutes on each side. And you can serve both hot and cold.

2. Beet cutlets

What you need: 500 g of boiled beets, 1 tablespoon of sugar, 150 ml of milk, 50 g of semolina. Separately – breadcrumbs.

How to cook
Beets grate and put in a saucepan. Add milk, sugar and heat. Slowly pour the semolina into the warm mixture, stirring gradually. Cool the boiled mixture, form cutlets out of it and roll them in breadcrumbs.

Fry the cutlets in a hot skillet greased with vegetable oil – about 2 minutes on each side. You can serve them on toast, with sour cream or with mashed potatoes.

3. Beetroot carpaccio

What you need: 1 beet, spices and additives to taste.

There is no exact recipe here, since even beets can be served in two ways: raw or boiled. We’ve rounded up two options for serving and dressing this simple yet delicious beetroot dish.

1. Raw beets and garlic
Using a sharp knife, cut raw beets into thin rings. Mix olive oil, salt and pepper, crushed garlic and a couple of drops of lemon juice. Marinate beets in this dressing for 15 minutes. Then put the beet rings on a plate and garnish with fresh herbs, green olives or capers.

2. Boiled beets and mushrooms
Boil the beets and finely cut into rings. Cut mushrooms into thin slices and fry in a pan until golden brown. Separately, mix olive oil and cilantro, then pour this mixture into the beets. Put the beets and mushrooms on a plate in a pile, alternating products. Top with fresh basil or sprinkle with herbes de Provence.

4. Baked beets

Beets can also be a complete tasty dish, if cooked correctly.
What you need: 2 medium beets, 1 clove of garlic, 2 tablespoons of vegetable oil, salt and pepper to taste, half a teaspoon of honey and a pinch of red pepper.

How to cook
First, preheat the oven to 180 degrees. Wrap the beets in foil and bake whole for 30 minutes. Remove it from the oven and wait 5-10 minutes. Remove the foil and cut the beets into 4 pieces. Separately, mix vegetable oil and honey, all spices. Crush the garlic and grind everything thoroughly. Pour all the beets with this oil generously and send them to the oven for another 15 minutes, but already open. Bake until golden brown.

5. Beet pancakes

What you need: 1 boiled beetroot, 2 boiled potatoes, 1 egg, spices and salt to taste, breadcrumbs and vegetable oil for frying.

How to cook beetroot pancakes

Beat an egg in a blender, add beets, potatoes to it and also chop. Mix in spices. Add breadcrumbs in such quantity that the liquid becomes viscous.

How to cook
Cabbage cut not too finely, place in a saucepan with boiling water and boil for 1-3 minutes. Remove it on a sieve and wait until all the liquid is gone. Nuts separately need to be ground separately into powder. Then place the cabbage in a blender along with nuts, add chopped onions and garlic, boiled beets, chopped cilantro, vinegar and spices. Whisk everything together in a blender and place the mixture in the refrigerator for half an hour. Then form into balls and place them neatly on a plate. The dish is served cold. It can be garnished with chopped cilantro and chopped walnuts.
