Back in the plum season, I discovered a wonderful plum filling for my favorite pastries – pies, pies, rolls, strudel, pancakes and fritters, but due to certain circumstances, unfortunately, I did not have time to share with you. And today I sincerely hope that someone will still take this recipe into service for their future culinary masterpieces next year …

To prepare this delicious plum filling, we need:

Proposed course of action:

To begin with, let me explain where such a non-standard idea comes from – to combine a plum with a pudding. The fact is that often when molding pies with berries and fruits, it is practiced to add a pinch of starch or flour. This is done, as a rule, in order to avoid leakage of berry juice while baking is in the oven. After all, it is the presence of flour or starch that thickens the resulting juice inside the pie and prevents it from flowing out, which favorably affects both the appearance of baking and its taste.

I think it is also not a secret for anyone that starch is included in the package pudding along with other components. So I decided at one fine moment to combine business with pleasure – I almost got a plum in chocolate. The main thing is that pastries with such an interesting filling turn out to be very tasty and will certainly find their fans among children. After all, chocolate.

So, let’s start preparing the filling.

Rinse the plums thoroughly under running water and lightly dry

Then cut the plums in half and remove the pits.

Cut the fruit halves into small pieces, and then put them in a deep bowl.

Now add sugar and a package of pudding to taste.

Today I want to post a video recipe for a very delicious chocolate cream pie. It is based on porous and tender shortbread dough. And the filling is a custard with the addition of chocolate. For me, the consistency and taste of the filling resembles Nutella. Such a chocolate pie is not ashamed to be served on the festive table and prepared for a family tea party.

Chocolate Pie Recipe:

Making the dough:
1. Mix the sifted flour, baking powder, vanilla sugar, powdered sugar, chilled butter and eggs.
2. Do not knead for a long time. Place the ball of dough in the refrigerator while you are busy making the filling.

Making the filling:
1. Heat the milk until hot, but not boiling.
2. Add sugar to the eggs, mix.
3. Then sift flour to them. Mix it with a whisk to get a homogeneous smooth mass.
4. Pour 2 ladles of milk into the egg-flour mixture, mix. This is done so that the proteins do not curl up.
5. Add what happened back to the milk. Stir.
6. Cook over low heat, stirring CONSTANTLY until thickened.
7. Turn off the burner, add chocolate.
8. Let the cream cool down. Pass through a sieve if necessary. If you get a lot of lumps.

We collect the cake:
1. Prepare the form. I have a diameter of 22 cm. Lubricate it with butter and sprinkle with flour. Remove excess flour.
2. Separate 2/3 from the dough. Roll out between sheets of parchment.
3. Transfer the resulting layer to the mold. Use your hands to form a neat base with smooth edges of the same height
. 4. Place the filling.
5. Decorate the top with the rest of the dough. You can be creative and decorate as you wish.
6. Bake at 180° for 30-40 minutes. Until golden.

This cake consists of a sandy-nut base, a delicate chocolate filling and all this is hidden under a shiny chocolate icing. Just a dream for lovers of sweet and chocolate. In its rich taste and alluring aroma, it is able to compete with even the most sophisticated cake.

First you need to prepare the base of cookies and nuts. For this shortbread cookie and nuts, you need to grind almost to the state of flour.

Add powdered sugar, cocoa and melted butter to chopped nuts and cookies. Mix everything thoroughly. You should get an oily, but rather loose mass.

Transfer the resulting mass into a mold (mine is 20 cm in diameter), form the bottom and sides. Pack everything tightly. You can use a form of larger diameter and not necessarily detachable. The cake will turn out lower, but will cook faster. The base should be baked in preheated to 180ºС for about 15 minutes.

In the meantime, prepare the filling. To do this, 5 eggs need to be lightly beaten with a pinch of salt. Don’t beat too hard, just whisk until the yolks and whites come together.

Add starch to the beaten eggs and mix well so that there are no lumps of starch.

Pour 300 grams of melted dark chocolate into the eggs. Mix everything again.

Pour the liquid chocolate mass into the base of nuts and cookies and bake at a temperature of 170-160ºС for about an hour. The baking time depends on the diameter and height of the mold. The lower the cake, the faster it will cook.

The finished cake has a very fragile crust on top, but inside it is already quite dense. Allow the cake to cool to room temperature. Then remove from the mold and refrigerate for 6-8 hours, preferably overnight.

When the cake is in the refrigerator, it can be covered with icing. For glaze, melt 100 grams of any chocolate and 50 grams of butter together.

Pour the icing over the cake and make beautiful stains with a spatula or spoon.

Sprinkle the edges of the pie with chopped nuts. Once the icing has hardened, the cake can be served with tea.
