Apple pie with sour cream and butter

Today I would like to share with you a recipe for the most delicate and very tasty apple pie, which is easy to prepare. But despite this lightness, it turns out to taste just amazing.

If you have ever tried Tsvetaevsky apple pie, then it tastes quite similar to it, but only similar. It turns out it is incredibly tender, even somehow airy, just melting in your mouth. When you put it on the table, until you eat it to the very last crumb, it is impossible to break away.

And so, we determined that it tastes a little like the famous Tsvetaevsky. But if you consider the cooking process, then you can compare it, perhaps, with everyone’s favorite charlotte. We also prepare the filling, apples, and combine everything together in a baking dish, and bake, of course.

I cook many variants of different charlottes, but not one of them produces even an approximate flavor option. And this fact puts this simple recipe among the most beloved, of course, I do not discount my favorite charlotte.

Today’s version is prepared quickly, easily, and the result is always predictable – the cake is beautiful, tall and tasty!


I recommend it to everyone, everyone, everyone … And I assure you that it will perfectly suit the table of any level. Just to drink tea in the evening with the family, or to treat guests. Yesterday, just in our family, there was a reason for this – the anniversary of the creation of our family. The closest and dearest people gathered. So for them I baked this homemade miracle – a pie

True, some guests arrived a little earlier than expected, and so I had to digress a bit. And I made two small mistakes, which I will certainly tell you about in the recipe. And here is the recipe itself.

Delicious apple pie with sour cream filling

  • apples – 600 – 700 gr
  • raisins – 0.5 cups
  • flour – 1.5 cups
  • egg – 3 pcs
  • sugar – 1 cup
  • vanilla sugar – 2 teaspoons
  • sour cream – 300 – 330 gr
  • butter 82.5% – 50 gr
  • baking powder – 1 teaspoon

You can limit yourself to this, but I have guests today. Therefore, I will also prepare a streusel .. Just he will give that very extra lightness and tenderness. And also decorate our pastries.

Don’t let this foreign beautiful word scare you. In order to prepare the streusel, you will need 3 minutes, no more.

We need for the streusel:

  • flour – 3 tbsp. spoons
  • sugar – 3 tbsp. spoons
  • butter 82.5% – 30 gr

Before we start cooking, let’s talk about which apples are best to use. The most delicious pastries are obtained when you use sweet and sour varieties. I really like the Semerenko variety. Apples of this variety are just sweet and sour, besides they are very crumbly. At the same time, they have a rather dense pulp, and therefore they definitely do not “break apart” when baking. Moreover, both large fruits and small ones are suitable.

The only thing is that this variety has a rather dense and thick skin. Therefore, it needs to be cleaned up. Otherwise, it will be felt when you eat. And without it, pastries will simply melt in your mouth.

I am talking about the merits of this variety of apples, and I myself will use others – my own. We have such beautiful apple trees. They are not very large, but sour – sweet, that is, just the way they should be. Why buy from a store when you have your own. In addition, you do not need to clean them, they themselves have a very thin skin.

I also note that it is better not to use very sweet fruits in this recipe. Baking in this case will turn out too sweet. Or you may need to reduce the amount of added sugar. But I have not experimented in this direction. Sour-sweet taste, in my opinion, just what you need.

Well, now the recipe itself.

1. Remove the butter from the refrigerator in advance to allow it to thaw slightly. Sometimes, it happens that you forget to do this, then you can put it in the microwave for 20 seconds. Although this is not advisable to do. In the microwave, as you know, the useful properties of the product are lost.

2. Sort the raisins, remove the sticks and rinse in several waters. Then pour boiling water over it and leave for 10-15 minutes. We need it to be not so dry, that is, its desired state is slightly swollen.

3. Break three eggs into a deep bowl and add sugar to them.

4. Beat with a mixer until smooth and sugar is dissolved. At the same time, the mass will slightly change in color, and will turn from yellowish creamy white with small patches of bubbles

5. Add butter, and continue to beat. As I indicated in the recipe, it is better to use 82.5% fat oil. It is not only healthy, but baking with it always turns out with great taste. In addition, if the percentage of butter is lower, then so-called trans fats have recently become often used there, which are not only not healthy, but also harmful to health.

6. You can use any sour cream, but the thicker and fatter it is, the more magnificent and tastier the cake will turn out. I have loose rustic sour cream with a fat content of 20%. It is thick, and in the truest sense of the word, there is a spoon in it.

Add sour cream to the whipped mass and beat again with a mixer. The mixture becomes lighter and more plastic, in principle, as it should be.

7. For flavor, add more vanilla sugar or vanillin. Add 2 teaspoons of vanilla sugar, and just a pinch of vanillin. I have a mixture with natural vanilla, so I add a not very full teaspoon of it.

By the way, instead of vanilla, you can add cinnamon. The aroma in this case will change slightly. After all, everyone knows that apples go well with cinnamon.

8. Well, we still have two more components left – this is flour and baking powder. Flour should be used the highest grade wheat. But it will definitely need to be sifted. With this procedure, we will not only prevent unwanted and hard particles from entering the dough, but also saturate the flour with oxygen. Which will also always contribute to obtaining lush pastries.

9. Also sift the baking powder through a sieve.

10. First mix the mass with a spoon, and only then turn on the mixer and mix the contents until smooth. At the same time, make sure that there are no lumps and lumps, even small ones.

The dough is obtained by consistency, not liquid, and not thick. It flows freely from the mixer blades, but may linger on them a little.

11. Set the dough aside, let it stand for a while and rest. In the meantime, let’s get on with the apples. As mentioned above, if necessary, peel the fruits from the skin and core with seeds. Then cut them into small cubes, with a side of no more than 2 cm.

12. Drain hot water from raisins, rinse with cold if necessary. Then dry with a paper towel.

13. Prepare a detachable form. Lubricate it with butter, thoroughly smearing the bottom and walls, and cover with parchment paper. Which in turn is also lubricated with oil.

This is where I made my first mistake – I forgot to do it. I talked to the guests and poured half of the dough simply into a greased form. Of course, I got the pie, but with great difficulty. If there was paper, then you wouldn’t have to puff and think how not to break it when you get it.

14. And so half of the dough is already in shape, and it’s the turn of apples. They just need to be poured into the dough, distributing it in an even layer.

Communication with guests continues, and immediately the second mistake. Not only did I forget to take a picture of this stage, I also forgot to pour raisins over the apples. He stayed on my napkin. It’s annoying, but okay! No one will even notice the loss, except for me, of course.

15. Pour the remaining dough on top. There are not many left, and not few. And just enough to cover all the apples.

16. Put the form with the contents in an oven preheated to 180 degrees. Bake 20 minutes.

17. Immediately start cooking the streusel (crumbs). As promised, we will do it very quickly.

Pour flour and sugar into a bowl, add softened butter and grind everything into crumbs. Right with your fingers. A most pleasant occupation, I must tell you. Streusel is a pleasure to cook! Fast, easy, fast…

By the way, we already have experience in this matter, we prepared one of the pies with plums, just with streusel. Let me remind you, it was a Bavarian plum pie.

Oh, how delicious it all is! Although our today’s culinary homemade masterpiece is in no way inferior to these overseas celebrities.

18. And so, 20 minutes have passed, let’s look into the oven, the top is slightly browned, which means it is well baked inside, but not yet completely ready. In order for it to reach a state of full readiness, it must be taken out and sprinkled with crumbs, evenly over the entire surface.

19. And send it back to the oven. We do not lower the temperature, let it bake further. It will take another 20 minutes to finish cooking.

20. At the appropriate time, take out the finished cake and let it cool. As we can see, he did not fall off with us, he turned out to be tall and beautiful, as we expected to see him. The baby was not fried, remained light and attractive. The aroma in the kitchen is simply divine. My guests are more likely to want to try it, they don’t even want to wait until it cools down.

But he needs to cool down. I was somewhat late with his cooking, because when I served it to the table it was still slightly warm, but no less tasty.

21. Didn’t write how to get it. Separate the detachable form and holding it by the parchment paper, carefully transfer to a dish. I had to cover it with a cutting board and turn it over. Then, on the other side, cover with a dish and turn over again. With this procedure, part of the crumbs woke up, and the cake was slightly flattened. But he didn’t lose his sight! Although he became a little shorter. It’s a shame..

22. That’s it, now you can cut it into pieces and serve to the guests. I cut it while it was still warm, so the cut crumbles a little. If it is allowed to cool completely, then it will not crumble.

As you can see, on the cut in the middle it is slightly pink. This is from apples, or rather from the skin. As you remember, we did not clean it. If you use peeled fruits, then on the cut the entire surface will be light. In addition to blotches of raisins, of course, if you add it.

The cake can be cooked with or without it. It will turn out delicious in any case.

Well, I have already written about all its taste characteristics. The cake is simply divine! It is simply impossible to describe in words all its taste qualities! Delicious, tender, fragrant!…

As written, exactly what happened! Do I need to add that after serving it on the table, after 15 minutes there was nothing left of it. And the guests were satisfied, and I am pleased that again I was able to surprise them with delicious and simple homemade cakes.

The only thing left to add is that before you start cooking any baking, you should always stock up on a good positive mood. Baking, like no other food, is sensitive to this. Not only high-quality and fresh products are important, but also bright positive thoughts and feelings!

A simple homemade apple pie with sour cream. Fragrant, tender, fluffy and delicious. Any cook can do it, try it and you won’t regret it.

So, let’s get down to making apple pie with sour cream. Put sour cream (15% fat) in a bowl.

We add eggs. If small, then you need three pieces.

Then add sugar and vanilla sugar.

Add a teaspoon of baking soda without a slide (vinegar can not be extinguished) and melted butter.

At the end put the sifted flour.

We mix all the ingredients. The dough is ready for the pie.

Line the baking dish with baking paper. Throw out most of the dough.

Wash apples, peel and cut into slices. Lay out on the dough.

Spread the rest of the batter over the apples.

We bake the cake in the oven at a temperature of 175 degrees for 40-45 minutes.

Take the cake out of the mold and let it cool.
